Vegetarian to paleo: Simple recipes with a few whines

Since I’ve been eating less almond flour – I find it difficult to digest anything but small amounts – I’ve searched for some dessert recipes that go lighter with nut flours. I noticed Danielle Walker’s new book discusses the same problem but I haven’t tried her dessert recipes yet. I did find one for Pecan Apple Crisp at Elana’s Pantry – permanently linked on my Blog Roll – and it was so good my husband asked me to fix it again soon. Since he doesn’t restrict himself to Gluten Free or Paleo, that’s quite a compliment.
I do have a couple of gripes. The recipe calls for palm shortening, which I cannot find locally and is expensive anywhere I buy it. I used some red palm oil I had on hand, which didn’t seem to affect the taste but does stain some dishes and my white food processor blade, plus it’s not especially attractive in the finished crisp. It’s easy to overspend and buy a lot of stuff when you go GF or paleo, so my advice is buy as little exotic stuff, such as red palm oil or cocao nibs, as possible, adding a little at a time. Grass fed meats, dairy, raw nuts, exotic chocolate, GF flours, and arrowroot powder are very expensive.
I love Elana Amsterdam’s recipes and own 2 of her cookbooks but she uses the food processor a lot, which I find annoying. I hate to clean a food processor plus mine is a heavy monster. I realize this isn’t Elana’s fault but nevertheless I hate using it for small pastry amounts or the like. Having said that, I was surprised to learn that pulsing the chopped pecans a bit for the crisp topping makes them much easier to digest. Here’s a pic – on the left side – of Pecan Apple Crisp with whipped topping; I think this is whipped cream but I sometimes use whipped coconut milk, which is more paleo.
There’s nothing easier or healthier than a quick Pumpkin Mousse. Using a hand mixer, mix 8-oz pkg of softened full-fat cream cheese with a 15-oz can of pure pumpkin puree. Add about 1/2 tsp pumpkin pie spice and 1/4 tsp ground nutmeg with liquid stevia – I like to use toffee flavored or vanilla cream flavored stevia – to taste. Mix 1/2 c whipping cream or chilled full-fat coconut milk till stiff. Add half to mousse, use remaining as topping for the mousse. Adjust any of these amounts as desired. Less cream cheese works fine and the spices are all to taste. Adding toasted pecans is a nice touch. Pic on the right. I have also added orange curls for a little color.
Eating more fish was particularly hard for me at first because it’s the healthiest and tastiest when it ‘s basically just fish with very little added. Tuna was the easiest because you can mix it with lots of ingredients for Tuna Salad or for a Nicoise Salad, which cover the taste plus don’t look like a fish. Salmon Croquettes work well for salmon. I’m trying to be less wimpy and am now eating more fish as filets, although I don’t see me eating shelled fish or trout with its head on. That’s okay. I’m eating white fishes with simple toppings and happy with that. Here’s a recipe I’ve eaten a few times that’s tasty and simple; I got the recipe from the package of frozen cod, Orca Bay Foods
Lemon Thyme Cod
1. Preheat oven 450
2. Spray non-stick cooking oil in baking dish.
3. Mix 1 minced garlic, 1 tsp fresh thyme [can substitute 1/2 tsp dried], 1 tsp grated lemon peel, salt and pepper to taste, 1 tsp minced green onion, 1/4 c [gluten free] bread crumbs.
4. Whisk in 1 T egg whites.
5. Pat dry cod filets.
6, Place in prepared baking dish. Brush with 2 T fresh lemon juice. Sprinkle bread crumb mixture on top filets, press lightly to hold.
7. Drizzle with melted butter, about 1/4 cup.
8. Bake 15-20 minutes.

Notice the Fox News headline is simply factual. Nothing about Mike Brown being a thug or “charging the cop like a football player with his head down” or being high or attacking the cop or standing in the middle of the street while ignoring orders to stop blocking traffic or the perp just ID’ed by the police scanner as the one who just robbed and threatened an immigrant store owner or a known gang member who attacked and injured a cop, although all these are true statements, verified mostly by black witnesses.

WTH would any black person vote Dem?
What died last night wasn’t just Obama’s race legacy – remember how his election was going to unite us – it was the death of so many liberal narratives. How on earth can the left replicate riots of the 60’s by denouncing to the world America’s supposed horrible race problems without admitting that the numerous, pervasive, all-encompassing liberal race/civil rights legislations haven’t failed?
If you’re black you can go to college with everything paid no matter what you did or didn’t do in high school. In fact, some states have changed grading requirements so they can get more blacks graduated. You can get jobs over more-qualified whites or Asians. You can even take that same puny degree/job skills and get teaching jobs in colleges or K-12 so you can teach anti-American black grievance if that’s your bag. You can get government work contracts since you get preferences over businesses owned by other races, even if their businesses are better, cheaper, and longer-established. You can get a job in federal or state government over more-qualified white/Asians, etc. You can get taxpayer-paid birth control or abortion or you can have as many kids as you want by as many men as you want and that’s considered normal. [Yeh, I know whites, etc get welfare as well but this behavior is – so far – not as readily accepted as normal by most other communities. Unfortunately that’s changing. I point this out because broad welfare reform has so badly damaged black families. ]
Liberal racial policies have virtually bankrupted our nation, destroyed black families, compromised religious practice and morals among blacks, deprived black men of responsibility in families, deprived far too many blacks of job satisfaction or the accomplishment from a good education, established corrupt race-hustlers as black leaders, and created a plantation mentality of pleasing their big-government sugar daddy by always voting Democratic. Just push the button Straight Democratic, isn’t that what Michelle Obama said to blacks a few weeks ago? She should know, her daddy was a cog in the Daley Chicago Machine and that’s where she began her career with Valerie Jarrett.

Does that sound flippant? I’m not flippant. A young man born into a broken family with a felon father and brother in a circle of uneducated criminal thugs with no vision or hope of a better life has been killed. A human being, a young man whose dysfunctional family nonetheless loved him and friends with no vision or hope of a better life either. it’s incredibly sad. I just heard the indictment; I’m going to take a hot bath, watch some episodes of the old All Creatures Great and Small series, and pray for this man, this community and this nation.
This tragedy did not merit what’s happening in St Louis. It appears pretty straight forward. It’s not smart to commit a crime, smoke dope, block streets, ignore police orders, be identified by the cop as a suspect in that crime, then fight with a cop and try to take his gun. As tragic as this is, my sympathy is with the cop.
If I sound flippant, it’s nothing compared to his “friends” or “supporters” or protesters. Shouting ‘We love you, Michael” while you run out of a vandalized store with a 60″ plasma TV. Yeh that’s love alright.

I remember Chuck Hagel as a senator from Nebraska and he was pretty dopey even then. Seemed like nice guy but never seemed really sharp and always talking about reducing the military and reducing the footprint of our military in the world. See why Obama wanted him as Secretary of Defense? Repubs in the Senate grilled him at his confirmation hearing and the Obama admin/MSM nailed the GOP for FTBB – Failure To Be Bipartisan, even though Hagel had a horrible hearing, exceeding even his own standards of dopey.
Alas for Chuck Hagel, who began to discover the dangers of a pacifist president in an evil world and a president-on-steroids when it came to reducing the military. Remember when Obama called ISIS “JV” and Hagel called ISIS “imminent threat?” You knew Hagel wouldn’t be aboard the Obama bus for long. Under, yes; aboard, no. Obama is famous for his micro-managing, even boasting of it on occasion, but he was not about to take the blame for devastating mid-term election losses. The MSM largely blamed the loss on a frightened nation, shaken up by ISIS beheadings, the Big Bear once again prowling and pissing on new territory, the disastrous Bergdahl – Gitmo Taliban swap, and growing concern over Iran and the bomb. Thus, Hagel was expendable. No surprise. President ‘Hey it’s not my fault’ Hans Solo Obama was not accepting any blame.
Well, at least we still have Susan Rice, Valerie Jarrett, Samantha Powers, plus John Kerry and the pstupid Jan Psaki to mock. Of course, mocking them isn’t much of a challenge.

I know it’s Monday. I apologize. My usual excuse is caregiving duties – which did play a role Sunday – but also a fast-moving front of rapid barometric pressure changes brought a sensation of head implosion with suddenly swollen sinuses.
